THE SERIES: Keeping It Simple

Staying healthy on a budget can be difficult. Even more so when you are first learning to cook for yourself. My goal for the keeping it simple series is to help you learn to do just that. I want to show you one device that you either probably have or it would be worth investing in and how you can utilize it to keep yourself healthy & happy.

I love simple recipes. Anything that can help me make healthy choices and requires minimal effort is something I want in my life. So on my recent trip to visit my parents, I went for my go to soup recipe to cook us dinner & nourish my body after two months of heavy work.

For this simple recipe, I’m featuring Deliciously Ella’s Roasted Red Pepper & Tomato soup, I told y’all it was a favorite. The most important device for this recipe: a blender.

Let’s be honest. I couldn’t live without my blender. It’s become a staple in my life so much that I’m a bit of a blender snob. There. I said it. I can’t stand to use a blender that doesn’t blend my ice or essentially stirs everything about doing nothing. Drives me crazy. And while there are so many great blenders on the market from the high-end to the low, my Ninja blender does that job just fine.

The best part about this recipe, it doesn’t require a lot of time standing in the kitchen. Most of the ingredients go into the oven to roast and then into the blender to make your soup. It’s great for entertaining last minute and full of fresh ingredients that make it taste so great!

My tips for this recipe:

You can fit everything on one cookie sheet most often it just won’t all lay flat.

Spray the pan with olive oil or coconut oil before putting the veggies on.

I don’t add water after I blend my soup. I like it thick & creamy.

Use fresh herbs w/ the exception of thyme & bay leaves. It tastes significantly better.

Pairs great with a vegan grilled cheese. 🙂
