I’m having a bit of an identity crisis. My savory life is changing before my eyes. With my recent diet changes and a lack of tortilla chips and salsa, I’ve turned to a new found love: chocolate. Now, I’m not talking about the packed with sugar and tons of ingredients kind. If you’ve been around lately, you’ll know I’m a huge fan of Go Raw chocolate. I keep a stash on hand and normally have one a day when I’m feeling like a little something sweet.
But on occasion, I feel a bit more indulgent. I want something a little creamier and not super filling. It is because of that desire my healthy hot chocolate recipe was formed. It’s not cheating on my savory life if you add a pinch of salt to it is it?
Nut milk. Raw cacao powder*. Vanilla extract. Maple syrup. Cacao butter*. Five ingredients that equal the creamiest, healthy hot chocolate. Your taste buds will think it’s extravagant and your body will get the added health benefits.
If you’re looking to make this recipe without the cocoa butter, I’d suggest you don’t. It’s honestly what gives this recipe its creaminess. Plus, it has the added benefit of helping with hormonal balance and brain health. See? I told you it’s healthy!
- 1 cup nut milk
- 1 tbsp raw cocoa powder
- ½ teaspoon vanilla extract
- ½-1 tbsp maple syrup to taste
- 1 teaspoon cacao butter
- Whisk all ingredients in a small sauce pan and heat on medium.
- Let mixture come to a simmer and and lower heat.
- Cook for 5 minutes or until everything is blended well together. Make sure to stir occasionally.
- Add to your favorite mug and enjoy!
